Healthy, Quick, Easy & Tasty Oatmeal Raisin Cookies Your Family Won't Stop Eating

These oatmeal raisin cookies are a quick healthy alternative to many expensive store bought snacks without all of the fillers and preservatives. As far as recipes for cookies go, this one is easy and quick to do with great results. Our 2 year old loves to help bake these cookies from gathering the ingredients, mixing and combining them, dropping spoonfuls of cookie dough onto the cookie sheets and scooping them off the trays when cooked. The challenge behind these oatmeal raisin cookies is: 'Can you stop after one?'

I will break down this cookie oatmeal recipe into 3 easy steps. Use your stand-mixer or a hand-mixer(the hand-mixer will take longer). You can even make a double batch and freeze one batch in an airtight freezer safe container for up to 3 months. Add parchment paper in between each layer of cookies.

Recipe Step #1: The 'Dry' Ingredients
'Dry' Ingredients List
- 1 cup all purpose flour
- 1/2 cup whole-wheat flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- 2 pinches salt
Combine all 'dry' ingredients in a large mixing bowl and set it aside. Preheat the oven to 175 degrees Celsius (approx. 350 Fahrenheit)

Recipe Step #2: The 'Wet' Ingredients
'Wet' Ingredients List
- 1 cup butter
- 1 1/4 cup packed brown sugar
- 1/2 tsp vanilla sugar
- 1 large egg

Combining the 'wet' ingredients
  1. With your mixer cream the butter in a large mixing bowl
  2. Add the sugars to the butter and cream it well
  3. Stir with a plastic spatula(granular texture means keep 'creaming')
  4. Beat in the egg until smoothly blended
The texture of the finished cookies will depend on the 'creaming' you do in this step. Take extra time if you need it--taste satisfaction really does justify the care and time you take here.

Recipe Step #3: Oatmeal & Raisins
Oatmeal & Raisins Ingredients List
- 1 1/2 cups oatmeal
- 1 full cup of raisins

Combining all ingredients
  1. Mix the flour mixture to the butter mixture in 3 additions
  2. Mix thoroughly after each addition
  3. Use a wooden spatula to stir in well the oatmeal and raisins
  4. Scoop a spoonful of dough and 'drop' on lined cookie sheet
  5. Space a few cm(1-2 inches) between cookies
  6. 'Drop' 12-16 cookies on each cookie sheet
  7. Bake for 8-10 minutes or until edges are slightly browned
  8. Leave cookies on cookie sheets for a few minutes
  9. Transfer the cookies to wire cooling racks
  10. Enjoy a warm cookie
