Here is a beautiful rich tasting cheesecake that I have been making over and over again regardless of the celebration or reason. I have often made this one for my beautiful wife to celebrate our anniversary. I must admit to you that I have even used this recipe for the whole family to enjoy and sometimes I have made it just to have a great tasting cake in the house.

I will break it down into the 'crumb base' and 'creme cheese filling' steps. This has always worked out great and tasted fabulous.

The Crumbs Of The Cake: Making The Base
This is an important step as we do not want to over bake the crumbs. I like to use a regular 9 inch spring-form pan, 2 children 4 inch spring-form pans and 6 of the muffin molds from a muffin tray. You can choose to use only the large pan if you want a really thick cheesecake. My wife always enjoys having a few extra 'snack' size cakes on hand, and with our family of 7 we need a few 'extras' so we can stretch it out a bit and make them last a little longer than just one sitting. These extra little snacks won't last very long, so enjoy it and be sure to get your piece quick (try it warm with a topping of blueberries, it really hits the spot).

Crumb Base Needs List
- 2 cups of digestive cookie crumbs using your food processor
- 5 Tbsp sugar
- 1/2 cup butter or margarine to be melted on stove-top
Steps For The Crumb Base
  1. Preheat your oven to 150-160 degrees Celsius(325ºF)
  2. Chop cookies into crumbs using your food processor(2 cups)
  3. Combine the crumbs with 5 Tbsp sugar in a large bowl
  4. On stove-top pot melt 1/2 cup butter or margarine at heat level 4
  5. Stir crumb-sugar mixture to the melted butter(moist throughout)
  6. Press onto the bottom of each of the pre-greased pans
  7. Set your timer: Bake at 150-160ºC for no more than 10 minutes

The Creamy Cheesecake Filling: Topping The Base
Take your time here, always blending mixtures smoothly will make this cake rich tasting, light, creamy and tantalizing to your taste buds. Be prepared as compliments will be showered your way by family and friends alike.

Creme Cheese Filling Needs
- 4 packages of 250g Creme Cheese (not light)
- 1 cup sugar
- 3 1/2 Tbsp white flour
- 2 Medium to Large eggs
- 250 m1 sour creme
(Use 3/4 cup sugar + 1/3 cup cacao for chocolate)
Mixing Steps For The Creme Cheese Filling
  1. Preheat your oven to 220 degrees Celsius (approx.450 Fahrenheit)
  2. Mix all 4 packages creme cheese at medium until smoothly blended
  3. Add the sugar and flour and blend well
  4. *add 3/4c sugar, 1/3c cacao & the flour here for chocolate*
  5. Blend in each egg, one at a time mixing well
  6. Add the sour creme and blend in well
  7. Pour this mixture over the crumb crust up to halfway in each pan
  8. Set your timer for 10 minutes baking at 220ºC(450ºF)
  9. After the 10 minutes reduce baking temperature to 110ºC(250ºF)
  10. Bake for a further 45 minutes to 1 hour at this lower temperature
  11. Clean up baking tools during baking time
  12. Take Muffins and/or small children pans out after 25 minutes
  13. Check cakes with a toothpick(remove cake when it does'nt stick)
  14. Cool for 5 minutes on cooing rack
